Debuting delicious new entrees for fall dining!

Beginning October 19, 2011 Henry's will have some spectacular new dinner entrees to choose from. New Comfort Classic entrees include the Coriander-Pepper Seared "Rare" Yellowfin Tuna with roasted fennel, sauteed spinich, roasted potato planks and lemon vinaigrette; Whole Wheat Spaghetti and Pistachio-Basil Pesto with roasted golden beets, fresh tomatoes, wilted arugula, shaved percorino, and rustic bread crumbs; and the Seasonal Vegetable Plate with a choice of four vegetables or sides.

New Daily Classic entrees include Wednesday's Beef Short Rib "Bourguignonne" with roasted mushrooms, pearl onions, tomatoes, roasted potato planks in a red wine sauce; and Saturday's Rosemary Grilled Lamb Chops.

Sweat the details when choosing a caterer

Steak or seafood? Wine or cocktails? Sit-down or buffet? Saturday or weekday?

Dozens of decisions add up when you're hiring a caterer. And in the end, you'll probably spend more than you intended, just like Mary-Ann Iskander, now a West Palm Beach resident who writes the WestPalmer blog.

Choosing a caterer

-Above all, sit down with the caterer and make sure you are comfortable with them. Did they listen to what you wanted? Were they flexible? Does their style mesh with the style of your party?

-Many people choose a caterer based on the price they want to pay, but there's more to price than the per-person rate.

-There are many things people may want from their special event that are part of the venue pricing in some places and add-on pricing in others. Want table-side wine service? You may have to pay for extra servers. Want to use the audio-visual equipment? You may have to pay a fee. Want chairs and linens? Yes, even those dinner staples are extra with some venues and caterers.

-More importantly, price can get you quality: tastier food, service with a smile and spotless clean-up...You get what you pay for."

Saving money

-Be prepared to pay per guest. A cocktail party with passed hors d'oeuvres will cost $15 to $45 a person depending on the food and extras, and you may still have to pay for the service staff and equipment.

-Whether a wedding or other event, using non-traditional days like Thursday or Sunday and off-season months like July and August, will help cut the costs.

-Buffets will use cost less than a sit-down dinner, and you can serve a special drink and wine rather than have a full bar.

-Most of the time if you're being trendy, you cannot also be thrifty. Popular add-ons are dessert tables and late-night buffets to round out a big party.

-The written proposal should include all charges: tax, service charge, whether you need to tip the staff, etc.

Choosing your food

Maybe macaroni and cheese is the guest-of-honor's favorite food - feature it on each plate. To alleviate the issue of getting guests to choose an entree, you can serve two small entrees on one plate - a dual plate.

-Feed your guests enough food for the time the event covers. Plan six to eight pieces of hors d'oeuvres per person per hour for a cocktail reception.

-Be aware that some things will cost you extra, like fees for a bartender, a chef station on a buffet or cake cutting fees of $2.50 to $5 a person.

-Do you need a special menu: gluten-free, no nuts, vegetarian?

What about a special theme?

-If you find the right caterer, you should be able to incorporate your theme into the food and decor. Just remember that if you want servers to wear costumes, it will have to be something that doesn't interfere with their job, Zeigler says. Go for a hat, a sash, a T-shirt with a slogan. And be prepared to pay for the special clothing.

-When you sit down to discuss it with the caterer, bring photos and examples. See if your caterer is receptive.

A packed slate of anticipated sequels is in store for 2011. Shia LaBeouf and Rosie Huntington-Whiteley will star in a Transformers sequel. Disney has Johnny Depp starring in Pirates of the Caribbean: On Stranger Tides and Pixar's Cars 2. Warner Bros. will bring us a sequel to the The Hangover with Zach Galifianakis, Bradley Cooper, and Justin Bartha. The new movie will take place in Bangkok in The Hangover 2. The X-Men sequel will feature Professor X's career with X-Men: First Class and a new batch mutants. Many other sequels are in store including George Miller's Happy Feet 2; a third installment of Alvin and the Chipmunks; Journey to the Center of the Earth 2; Spy Kids 4; and A Very Harold & Kumar Christmas.

Look for a lot of Superheroes in the movies in 2011. The Green Hornet, starring Seth Rogen and Jay Chou, hits theaters in January. Marvel Studios’ Thor, with British actor / director Kenneth Branagh, and Captain America: The First Avenger, starring Chris Evans, will be released in May and July. Between the two Marvel films, Warner Bros. will have a DC Comics adaptation of The Green Lantern in June. This will be a 3D film, starring Ryan Reynolds as Hal Jordan, with Martin Campbell directing a script by Greg Berlanti.

More than 25 movies are in store for 3D releases. Look for James Cameron's Sanctum; the Justin Bieber life story and concert movie; the Shrek spin-off Puss in Boots; Paul Bettany's Priest; and live-action/CG comedy The Smurfs, with the voice talents of Katy Perry, Jeff Foxworthy, Paul Reubens, and George Lopez.

Every night as I walk through the dining room at Henry's, I am asked, "When will Deck 84 be open?" I can tell you all that Deck 84 will be open, Saturday night, November 20, 2010.

Of course at the helm is Burt.... followed by a management team he assembled himself. Garett Hagan is our General Manager, with assistance from myself, Amy(from Henry's,) Dara (from Bogart's) and Lora, our wine guru. Of course there is Chef Chuck who has put together a great menu. From salads to flatbreads,mainplates to awesome desserts, and plenty of seafood. Specials everyday for lunch and dinner.

Bogart’s Bar & Grille, situated within the upstairs Premier Level of the Cinemark Palace 20 movie theater, has been delighting guests with wonderful food and superior service since 2006. To create a fresh look, the Rapoport’s Restaurant Group restaurant has undergone a renovation to enhance the guest experience in dining areas and boasts an expanded bar. SOMETHING TO CELEBRATE: 2009 VALUES

As the recession continues Rapoport’s Restaurant Group, led by South Florida’s veteran restaurateur Burt Rapoport, has rolled out a new “value” strategy based on this year’s economic outlook. Rapoport restaurants include OPUS 5 and Bogart’s Bar & Grille in Boca Raton, Henry’s in Delray and Clematis Social in West Palm Beach.

“Driven partially by the downturn in the economy, we’ve looked at every aspect of our business to see how we can offer a better value to our customers,” said Rapoport.

All of the Rapoport’s Restaurant Group restaurants are offering new dining options so diners can keep a little more “green” in their pocket. With creative menus that offer a variety of size options, and wine priced well below any other local restaurant, this strategy shows a new revolution, gastronomically speaking, in how to stretch you dining out dollars a little farther. Some examples include:

• An expanded selection of small and sharing plates. These smaller plates are priced around $10 so you are able to share a few without breaking your budget. One tasty example includes the Shanghai Chicken Potstickers with citrus Ponzu ($10) at OPUS 5 (located in The Shops at Boca Center on Military Trail in Boca Raton, 561-544-8000).

• Portion size options have been added to all menus. For instance you now have a choice or either one or two Pork Chops with maple whipped sweet potatoes, seven vegetables and green apple glaze ($16/23) at Henry’s (located on Jog Road in Delray, 561-638-1949).

• Reduced add-ons is another example of the new menus. The affordability of adding a soup or a salad for only $5 provides you with another value option–more choices at lower price points.

• Early dining specials are really saving diners some dollars. Henry’s and OPUS 5 are offering early menus that make dining out even more cost effective. Early offers include a “buy one early dinner entrée, get one entrée at half price” offer at OPUS 5, which will be offered Monday through Saturday from 5:30 to 6:00 pm. Diners may select off of our regular menu including the new “Simply Grilled” selections. This is an incredibly cost effective way to dine out. On Sunday at OPUS 5 a Pre-Fixe 3-course menu is available all night, and starts at only $22. Henry’s has a great buy with their early menu offering a “buy one early dinner, get a second for only $6”. This really affordable offer at Henry’s comes in under $25 for two—this is just about the best pricing you will find for reliably great food. Times also vary so please call before heading out.

Continuing the service emphasis through 2009 is a top priority. All of the Rapoport’s Restaurant Group restaurants are enhancing every aspect of the dining experience: from genuine consideration for each and every guest; providing an honest value; offering the highest-quality food products available; maintaining delicious distinct flavors in all dishes; to first-class upkeep of each restaurant, Rapoport plans to “over-deliver” on customer expectations.

A new wine strategy has been implemented for 2009. Margins have been slashed so wine prices fall well below industry standards. The wonderfully full-bodied Burt’s Cuvee made exclusively for Rapoport by Markham Vineyards is not available anywhere but at the Rapaport restaurants, comes in at only $7 per glass or $28 per bottle. Other examples of reduced wine prices include both bottles and glasses priced significantly lower than other restaurants.

Perfect Pumpkin Cheesecake Recipe

THE PERFECT HOLIDAY PUMPKIN CHEESECAKE

by Henry's in Delray

Ingredients
12 tablespoons unsalted butter, melted
2 1/2 cups graham cracker crumbs
2 3/4 cups sugar
Salt
2 pounds cream cheese, at room temperature
1/4 cup sour cream
1 15-ounce can pure pumpkin
6 large eggs, at room temperature, lightly beaten
1 tablespoon vanilla extract
2 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground cloves
2 cups sweetened whipped cream
1/3 cup toasted pecans, roughly chopped

Directions
Position a rack in the center of the oven and preheat to 325 degrees Fahrenheit.

Brush a 10-inch springform pan with some of the butter. Stir the remaining butter with the crumbs, 1/4 cup of the sugar and a pinch of salt in a bowl. Press the crumb mixture into the bottom and up the sides of the pan, packing it tightly and evenly. Bake until golden brown, 15 to 20 minutes. Cool on a rack, then wrap the outside of the springform pan with foil and place in a roasting pan.

Bring a medium pot of water to a boil. Meanwhile, beat the cream cheese with a mixer until smooth. Add the remaining 2 1/2 cups sugar and beat until just light, scraping down the sides of the bowl and beaters as needed. Beat in the sour cream, then add the pumpkin, eggs, vanilla, 1 teaspoon salt and the spices and beat until just combined. Pour into the cooled crust.

Gently place the roasting pan in the oven (don't pull the rack out) and pour the boiling water into the roasting pan until it comes about halfway up the side of the springform pan. Bake until the outside of the cheesecake sets but the center is still loose, about 1 hour 45 minutes. Turn off the oven and open the door briefly to let out some heat. Leave the cheesecake in the oven for 1 more hour, then carefully remove from the roasting pan and cool on a rack. Run a knife around the edges, cover and refrigerate at least 8 hours or overnight.

Bring the cheesecake to room temperature 30 minutes before serving. Unlock and remove the springform ring. To finish, place a dollop of the whipped cream on each slice and sprinkle with the toasted pecans.
